Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

I wrote this menu before we left for our trip, so I don’t have much else new to say other than I hope you all had a wonderful weekend!

  3. Shannon, I always look forward to your Monday meal plans! I try to eat a little snack before I start browsing through your post to prevent me from salivating as I scroll through all the scrumptious goodness. This week the cashew chicken really stands out!
