Menu Planning Monday #93

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

I hope you are enjoying your Memorial Day weekend and are having the same beautiful weather that we are here in Washington!

California Burger Bowl

I feel like burgers are mandatory at some point over the holiday weekend, and since we have yet to have them, tonight is the night. And I am diggin’ this bunless version! I will also add some fresh mozzarella to the mix as well.

Simple and Savory

Stuffed Green Chili Meatballs in Tomatillo Sauce

These look SO good! And I love that they’re a healthy version, too!

We had a phenomenal Monte Cristo sandwich in Disneyland and I have been thinking about them ever since! And funny thing, I didn’t even know what a Monte Cristo sandwich was until Disney… Did you? This day is definitely a splurge day.. though I will be using wheat bread! That helps, right?!

The Classic Monte Cristo

Friday, Saturday, and Sunday

All I know is that this is FARM CHICKS WEEKEND! WAHOO! I look forward to this weekend ALL year. As far as what we are eating these days… who knows!

  1. Mmm…those chili meatballs look really good!

  2. Ashley Basnight says:

This post was so helpful! I have trouble finding different meals to plan through the week and it cause me to fall back into old habits of eating out! Can’t wait to try these out! Thanks for the great post!

  3. I’m going to have to try those meatballs. Those look so good! Pinning for later.

  4. The Monte Cristo sandwich looks so delicious! I agree burgers are mandatory for the holiday weekend.

  5. Those scrumptious Stuffed Green Chili Meatballs look heavenly! And three cheers for Monte Cristo sandwiches. What a great meal planning line-up. :-)

  6. I’ve had tomato sauce and bbq on my meatballs, but not tomatillo. That sounds worth a try to me.

  7. Monte Cristos are amazing! I love that you so carefully plan out your week’s meals. I was actually so much better about this BEFORE I had the baby. Then for a while – despite the fact that my husband and I are both total foodies – it was egg sandwiches and frozen pizza for a bit. I’m getting much better now though lol :)
