Menu Planning Monday #91

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

The countdown has officially begun… less than ONE week until the vacation I have been waiting YEARS for! I cannot WAIT!


Turkey Taco Quinoa Skillet 

I love all of the protein in this dish and plan on keeping the green chilis out to keep it mild for the kiddos and will be using canned corn.

Family Favorite Meatloaf

It’s our FAVORITE girl’s 7th birthday today! And little miss has requested meatloaf for her birthday dinner, so I am going to try this recipe and add lean turkey sausage and a zucchini to it as well. I will report back, but it looks delicious!

Date night = macaroni and hot dogs for the kiddos. And really, date night this night means dinner and getting ready for our trip with last minute errands

Friday and Saturday

Eating up as many leftovers as possible!
