Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
I must be having major Mexican food cravings as I have planned two meals this week which fall into that category.
I like that these are skinny enchiladas made with greek yogurt, wheat tortillas, and reduced-fat cheese, but still look amazing!
Date night! = Leftovers for the kiddos
I am going to use Greek yogurt cream cheese and leave out the jalapenos for our fam.

These look SO good! And for the crema, I am going to sub Greek yogurt for the sour cream and use olive oil based mayo
Ahead of Thyme
Mom and Dad are playing volleyball, so a packed dinner it is for the big kiddos while Frankie hangs with our sitter.
