Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
Part of this week and this weekend I will be in Lake Tahoe celebrating a friend’s birthday, so in preparation of this trip I am making the meals for the week eeeeeasy.

Date night = Grilled cheese and tomato soup
This recipe is fantastic for leftovers. On the first night make the meat and serve with the veggies and potatoes, then for leftovers make the french dip sammies. WIN!

Grammie and Poppie are now in charge of meals, and since I don’t know what’s on their agenda I thought I’d include one more that looks simple and tasty, and if I were making it I would sub the spices for one of those fajita packets.
