Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

Gwyn saw a Red Lobster commercial showcasing a shrimp entree and she just about licked the TV drooling over those shrimp, so I thought I’d make this dish specially for her and since our fam also enjoys asparagus, this seems like a winner.
All of these recipes are pretty dang healthy this week, so enjoy and then maybe indulge on some sweets later

Date night = Turkey and cheese rollups for the kiddos
LOVE ZOODLES! And since we have soccer this night, I am hoping to possibly crockpot this recipe and add the zoodles in at the end so we can eat it early.

My husband threw this Basil Pesto into our cart at Costco a while back and we have yet to use it, so this recipe seems like a good fit to put it to use. Nice and easy!
