Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
I am still currently dairy-free due to the little man, so most of the recipes I choose reflect that. And, since the weather is nice I am so not wanting to be in the kitchen much. So, this week’s menu has the bulk of the cooking being delegated to the outdoor grill.
Here is what we are having this week:
Date Night = Turkey and cheese rollups for the kiddos
While it may not officially be summer yet, this is our last week of school making it feel pretty summery around here. Thus, I now lump Friday/Saturday/ Sunday as one big weekend. We will be BBQing with friends one night, and either eating leftovers or creating something with what is already in our kitchen the other days.
