Menu Planning Monday #36

Welcome to Menu Planning Monday!

For some, one of the worst parts about menu planning is actually deciding on what to make. I find myself stressed out once the late afternoon hits and I have no idea what we are having for dinner, so if I want to prevent that and stay on top of things, menu planning it is. Each week I try to plan for healthy meals that currently do not include any dairy or that can easily be adapted (baby is intolerant), that don’t include a bunch of crazy ingredients and that will get me in and out of that kitchen as quickly as possible.

Here is what we are having this week! I am especially looking forward to the dessert at the bottom, which I plan to double, so that my sweet tooth can be satisfied all week. :)

Kielbasa, Pepper, Onion and Potato HashThe Two Bite Club

I use turkey kielbasa for this as well as sweet potatoes and it is a family-favorite. I actually bought double the ingredients so we would have plenty of leftovers for lunches, too.

Our sweet boy turns 4 and we are taking the birthday boy on a special dinner-date to wherever he would like to go.

Paleo Steak Salad

We have really been enjoying this salad. This last time we didn’t make the dressing and just let the juice from the steak act as our dressing and it was so scrumptious!

No Bake Carrot Cake Energy Bites

I have been having a major sweet tooth and LOVE carrot cake, so I plan on making these sometime this week and am hoping these turn out!
