Menu Planning Monday # 28

Welcome to Menu Planning Monday!

For some, one of the worst parts about menu planning is actually deciding on what to make. I find myself stressed out once the late afternoon hits and I have no idea what we are having for dinner, so if I want to prevent that and stay on top of things, menu planning it is. Each week I try to plan for healthy meals that currently do not include any dairy or that can easily be adapted (baby is intolerant), that don’t include a bunch of crazy ingredients and that will get me in and out of that kitchen as quickly as possible.

Here is what we are having this week, and I will say, these ALL look really tasty! If you have any recipes you think we should try, let me know!

Crockpot Salsa Verde Honey Lime Chicken Tacos

(the avocados on these look amazing. I have had a run of bad luck buying good avocados. Anyone have a go-to place for great avocados?)

A Latte Food

Date night= Leftovers /easy kid meal

Spicy Fish Taco Bowls

( I think I may substitute the fish for chicken)

Jo Cooks

Sweet Jenna’s Turkey and Veggie Meatloaf

(Double the recipe and freeze one for another night!)

Lady’s Little Loves

Chicken Avocado Lime Soup

(I think I may add some navy/cannelini beans to this to make it a bit heartier.)

Cooking Classy

It’s the daddy/daughter dance so Gwyn and The Hubby will probably go out to eat and the boys and I will have leftovers.

Superbowl (food ideas for that coming soon!)

  1. I am loving all the avocado :) These all look so good too. Might have to try those tacos though for sure! Menu planning is hard for me too. Especially when I have no appetite and the boys don’t have any suggestions.

  2. Those spicy fish taco bowls look GOOD! It has all of my favorite ingredients! This is my first time at your blog but I already love it! Keep up the great work. 😀

  3. All of these recipes sound AMAZING. I may try some of them this week!
